I make this cake for myself every July 19th, which is my birthday.
Note: This recipe is really easy to make, but it is DECADANT! If you are not into a whole lotta chocolate, it probably isn't for you. But, I can tell you... this cake is YUMMY!!! Mmmmm... Good!
Chocolate Chip Chocolate Cake with Cream Cheese Frosting
The Most Chocolatey Chocolatiest Cake Mix you can find
1 package Semi Sweet Chocolate Chips
Cream Cheese Frosting (recipe below)
Grease two 8 inch or two 9 inch round pans. Follow the directions for the cake mix to make the batter. Pour the package of semi-sweet chocolate chips evenly in both greased pans. Pour the batter into each cake pan evenly (with the chocolate chips on the bottom). Bake according to the directions on the cake mix box.
When the cakes are finished baking pull them out of the oven and place them in the freezer for about 30-60 minutes. (The chocolate chips need to be hardended in order to not make a mess) Once the cakes are completely cooled and the chocolate chips are hard, place one cake upside down on a platter. Put the cream cheese frosting on top of the cake (which will be the middle), then place the other cake right side up on top of the first cake and frosting. Frost the rest of the cake, sides and all with the rest of the cream cheese frosting.
If there is a little frosting left over add some food coloring to it and write a little message to the Birthday boy/girl!
Cream Cheese Frosting
1 package cream cheese
1 stick real butter
1 package powdered sugar
1/2 cup water
1 tablespoon lemon juice
1/2 tablespoon vanilla
In a bowl, mix together the cream cheese and butter. Slowly add the powdered sugar until the frosting has a consistency of thick paste. Add the lemon juice and vanilla. Add more powdered sugar, you want to use all of the powdered sugar if possible. Once all the powdered sugar has been added, if the consistency is to thick, add a teaspoon of water at a time until the frosting is as thin as toothpaste. Once it has reached that consistency, it is ready to be used.
